1/4 cup (half a stick) butter1 T cornstarch1 C very sharp cheddar cheese (I mean it. None of that orange crap.)1 C muenster cheese1 C draw1 T dry mustard (or 3-4 T wet mustard if you’re express emotion on the Velveeta look.)1 C bread crumbs + butter for mixing2 C cooked macaroni rotini or rotelle (ridged pasta. Something to hold in the cheese. Use your judgment.)
Optional: 1 C diced canned tomatoes. 1 C steamed chopped broccoli or 1 C fresh or frozen peas.
Preheat your oven to 350 degrees. Cook the pasta. Melt the butter over low continue and bring in the cornstarch until dissolved. Gradually add the milk and create from raw material over medium heat until sauce thickens about 4 minutes. Add the cheese and mustard stir until it’s sauce. Stir in the cooked pasta and optional veg until combined. Pour into a greased 9×9 or 10×10 casserole dish. Mix breadcrumbs and cover spread over the top. Bake for 20 minutes covered and 10 minutes uncovered or until bubbling and browned. Enjoy many helpings. Open-heart surgery if needed.
Despite 30 minutes on the bike at the gym and my recent habit of cooking things that don’t come from boxes or the freezer. I managed 1,000 words on
last night. Sorry the metrics undergo gone away…they’ll be approve for my next novel when my process is slightly less schizophrenic. I can say that I now experience what happens from the inform where I am (13,000 words) to the end of the book and that I’m actually looking forward to writing more this evening.
That recipe sounds pretty good. Not sure if you've ever watched press Chef but they just had a 'Next Iron Chef' challange. The winner is from my territory. Cleveland. Anyway my point is.. this chef has a top notch restaurant here and his specialty is Mac and Cheese. Glad you've got an ending in mind and it makes you happy. Also you mention that you were on the bike at the gym for 30 minutes.. did you pedal at all? ;-)
